10 Minute Instant Pot Mashed Potatoes

Delicious super easy mashed potatoes packed with spices and cream take only 10 minutes to put together.

Ingredients

  • 4-6 potatoes russet (peeled or un peeled) cleaned and scrubbed well, diced into 3" bits
  • 1 ½ cups chicken stock
  • 2 tbsp garlic powder
  • 3 tsp celtic sea salt
  • 2 tbsp Fresh cracked pepper
  • 4 tbsp butter
  • ½ cup heavy cream
  • ¼ cup sour cream
  • 2 tbsp fresh diced dill

Instructions

    Cup of Yum
  1. Place potatoes and stock in Instant Pot.
  2. Set to high pressure, sealed, for 8 minutes.
  3. Force release.
  4. Add additional ingredients, and blend with a handheld mixer until light, fluffy, and smooth.
  5. Serve immediately, and top with fresh dill (optional)
