10 Minute Spicy Shrimp Stir Fry

Ingredients

  • 1 teaspoon sesame oil
  • ½ inch knob ginger minced finely
  • 1 clove garlic minced
  • ½ teaspoon red pepper flakes
  • 1 green bell pepper seeded and chopped thickly
  • 1 onion chopped thickly
  • 2 green onions chopped
  • 20-25 large shrimp precooked, shells and tails removed, deveined
  • ¼ cup peanuts chopped
For sauce
  • 1 teaspoon sesame oil
  • 4 TBS lite soy sauce
  • 1 teaspoon cornstarch
  • 4 TBS water
  • ½ teaspoon red pepper flakes
  • 1 TBS brown sugar

Notes

  • This recipe would also be delicious made with chicken. If you use chicken, I would add the chicken in the beginning with the rest of the vegetables, and cook through, then add the sauce ingredients. May take a few minutes longer.Don't eat meat? Make this totally vegetarian and just add more of your favorite vegetables!
