Ingredients

Soak:
  • 20 ounces 15 bean mix , discard packet
  • 8 cups water
Bean Soup:
  • 8 cups chicken broth
  • 1 ham hock
  • 1 yellow onion , diced
Finish:
  • 15 ounces diced tomatoes canned
  • 2 cloves garlic , minced
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper coarse ground
  • 1 teaspoon oregano dried
  • 1 teaspoon thyme dried
  • 1 teaspoon paprika
  • 1 teaspoon chili powder
  • 1 teaspoon cumin

Instructions

Soak:
    Cup of Yum
  1. Add the beans to the water, let sit overnight.
Cook the Beans:
  1. Rinse the beans well.
  2. Place the beans in a large dutch oven pot with chicken broth.
  3. Add the ham hock and onions on medium heat bring to a simmer.
  4. Reduce heat to medium low, cover and cook for 2 hours (please note this is only if beans are soaked, if not they will need to cook longer, another hour at least).
  5. Remove the ham hock bone and shred the pork.
Finish the Soup:
  1. Add in the diced tomatoes, garlic, salt, black pepper, oregano, thyme, paprika, chili powder and cumin.
  2. Stir well to combine, then let come to a simmer.
  3. Cook for an additional 30 minutes uncovered.
  4. Serve with saltines or cornbread.
