15 Min Vegetable Rice Quinoa Salad
A quick healthy vegetable loaded rice and quinoa salad that is gluten free, and wheat free

Ingredients
- 150 g rice quick cook, Clearspring brand, 1 cup
- 150 g quinoa quick cook, Clearspring brand, 1 cup
- 1-2 tbsp tamari
- 1 carrot grated
- 4 cherry tomato chopped
- 4 radish sliced
- 1/2 red bell pepper chopped
- 2 spring onions scallions sliced
- 1 salad greens handful
Instructions
- Add rice and quinoa into a pot of boiling water and simmer for 10 mins.
- Drain rice and quinoa mix and let cool.
- Add the rice and quinoa into a bowl and mix in all the other ingredients and serve.

Notes
- OH prefers the grains cooked for 15 mins so you can try that too and see what you prefer. Serves 2 as a main or 4 as a side.
