15-Minute Date Balls Recipe
These date balls blend Medjool dates, oats, walnuts, and nut butter into a sticky, malleable dough that can be rolled into bite-sized snacks. Coating them in pistachios, coconut, or sesame seeds offers extra texture and flavor contrast. Their sweet and nutty profile is made versatile with optional spices or cocoa powder, ideal for a quick, wholesome treat or energy bite.
Ingredients
- 12 Medjool dates
- 1/2 cup old fashioned oats or quick oats
- 1/2 cup walnuts
- 1/2 cup nut butter such as almond butter or peanut butter
To Roll The Balls
- pistachio ground
- desiccated coconut
- sesame seeds
Instructions
- Using a knife, cut open the dates and discard the seeds.
- Place the dates, oatmeal, walnuts and nut butter in the bowl of a food processor. Mix until the ingredients are well incorporated. If the mixture looks dry and not together, add 1 to 2 tablespoons hot water and mix again. You might need more hot water, but add gradually and carefully so the mixture doesn't get to soft.
- Once the mixture comes together and is ready to roll, rub some olive oil on your hands and palms and scoop out about 1 tablespoon of the mixture. Roll it into a ball and set it aside. Repeat with the remaining mixture.
- Roll each date ball in ground pistachios, sesame seeds or desiccated coconut. Arrange them on a platter and serve.
Notes
- Store date balls in an airtight container in the refrigerator for up to two weeks to keep them fresh.
- Freeze date balls for up to six months, thawing in the fridge overnight before serving.
- Enhance the flavor by adding spices such as cinnamon, cardamom, or cocoa powder, or incorporate chia or flax seeds.
