15 Minute Garlic Shrimp Linguine

Ingredients
- 1 pound linguine pasta
- 4 tablespoons butter salted
- 2 tablespoons olive oil
- 1 tablespoon garlic about 3 cloves, minced
- 1 pound Shrimp peeled and deveined, raw
- 1 teaspoon salt or to taste
- 1/2 teaspoon black pepper
- 1/2 teaspoon red pepper flakes crushed
- 1/4 cup lemon juice
- 1 tablespoon lemon zest
- 2 tablespoons Parmesan Cheese grated
- 2 tablespoons parsley chopped, fresh
- 1/2 lemon thinly sliced and halved
Instructions
- Cook the 1 pound linguine pasta in a large pot of lightly salted boiling water according to package directions. Before draining, reserve 1/2 cup of pasta water and set aside.
- In a large skillet over medium-high heat, melt 4 tablespoons salted butter and add 2 tablespoons olive oil. Stir in 1 tablespoon minced garlic and 1 pound raw shrimp. Season with 1 teaspoon salt, 1/2 teaspoon black pepper, and 1/2 teaspoon crushed red pepper flakes. Cook, stirring continuously, until shrimp turn pink, about 2-3 minutes.
- Add 1/4 cup lemon juice and 1 tablespoon lemon zest. Simmer for 1 minute, stirring occasionally. Remove from heat.
- Toss the shrimp mixture with 2 tablespoons grated Parmesan cheese, 2 tablespoons chopped fresh parsley and 1/2 lemon, thinly sliced.
- Add the cooked linguine and reserved pasta water to the skillet. Toss to coat evenly. Serve immediately.
