Ingredients

  • 1 pound linguine pasta
  • 4 tablespoons salted butter
  • 2 tablespoons olive oil
  • 1 tablespoon minced garlic  about 3 cloves
  • 1 pound raw shrimp peeled and deveined
  • 1 teaspoon salt or to taste
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon crushed red pepper flakes
  • 1/4 cup lemon juice
  • 1 tablespoon lemon zest
  • 2 tablespoons grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley
  • 1/2 lemon thinly sliced and halved

  1. Cook the 1 pound linguine pasta in a large pot of lightly salted boiling water according to package directions. Before draining, reserve 1/2 cup of pasta water and set aside.
  2. In a large skillet over medium-high heat, melt 4 tablespoons salted butter and add 2 tablespoons olive oil. Stir in 1 tablespoon minced garlic and 1 pound raw shrimp. Season with 1 teaspoon salt, 1/2 teaspoon black pepper, and 1/2 teaspoon crushed red pepper flakes. Cook, stirring continuously, until shrimp turn pink, about 2-3 minutes.
  3. Add 1/4 cup lemon juice and 1 tablespoon lemon zest. Simmer for 1 minute, stirring occasionally. Remove from heat.
  4. Toss the shrimp mixture with 2 tablespoons grated Parmesan cheese, 2 tablespoons chopped fresh parsley and 1/2 lemon, thinly sliced.
  5. Add the cooked linguine and reserved pasta water to the skillet. Toss to coat evenly. Serve immediately.
