20 Minute Honey Ginger Chicken

Ingredients

  • 2 tablespoons oil
  • 1 lb boneless skinless chicken breasts chopped into bite sized pieces
  • 2 tablespoons corn starch
  • 1 teaspoon salt
  • ½ teaspoon pepper
Ginger Chicken Sauce
  • ½ cup soy sauce
  • ½ cup honey
  • 1 ½ tablespoon minced or grated fresh ginger
  • 1 clove garlic
  • 1 lime squeezed
  • sesame seeds and green onion optional garnish

  1. In a medium bowl combine the chicken, cornstarch, salt, and pepper. Stir until the chicken is covered in the cornstarch.
  2. In a separate medium bowl combine the soy sauce, honey, ginger, garlic, and lime juice. Stir until well combined and the honey is no longer separated. Set aside.
  3. In a large skillet add the oil and heat over medium high. Once heated add the chicken pieces and cook for about 5-7 minutes or until fully cooked stirring occasionally. When the chicken is done remove from the heat.
  4. Wipe the skillet clean then add the honey ginger soy mixture over medium high heat. Bring to a simmer and cook for about 5-7 minutes or until reduced and thickened. Stir frequently to avoid burning.
  5. Add the chicken back to the skillet and toss with the sauce. Garnish with green onion and sesame seeds. Serve immediately with warm rice.
Air Fryer Instructions
  1. In a medium bowl combine the chicken, cornstarch, salt, and pepper. Stir until the chicken is fully covered in the cornstarch.
  2. Spray the air fryer basket with oil to prevent the chicken from sticking. Add the chicken to the air fryer and cook for 8-10 minutes or until cooked through. Shake the air fryer basket halfway through.
  3. While the chicken is cooking, add soy sauce, honey, ginger, garlic, and lime juice to a small saucepan over medium heat. Bring to a boil then reduce to a simmer and cook uncovered for 5-7 minutes or until reduced and thickened. Stir frequently to avoid burning. When it's done, remove from heat and set aside.
  4. When the chicken is done add to the saucepan and toss in the honey ginger glaze. Top with sesame seeds and green onion. Serve extra sauce over white rice and vegetables.
Oven Instructions
  1. Preheat oven to 450 degrees
  2. In a medium bowl combine the chicken, cornstarch, salt, and pepper. Stir until the chicken is fully covered in the cornstarch.
  3. Place chicken on a sheet pan lined with parchment paper. Spray with cooking oil and bake for 10 minutes. Flip the chicken then bake for an additional 10 minutes or until cooked through. You may need less time if your chicken is cut into smaller pieces.
  4. While the chicken is cooking, add soy sauce, honey, ginger, garlic, and lime juice to a small saucepan over medium heat. Bring to a boil then reduce to a simmer and cook uncovered for 5-7 minutes or until reduced and thickened. Stir frequently to avoid burning. When it's done, remove from heat and set aside.
  5. When the chicken is done add to the saucepan and toss in the honey ginger glaze. Top with sesame seeds and green onion. Serve extra sauce over white rice and vegetables.
