20 Minute Sweet and Spicy Noodles

20 Minute Sweet and Spicy Noodles use rice noodles tossed in a sauce of soy, hoisin, honey, and chili garlic sauce, brought together with garlic and sesame oil. Fresh shredded carrots, chopped peanuts, cilantro, and green onions add crunchy and herbaceous elements, while optional Sriracha provides extra heat, creating a layered balance of sweetness, spice, and texture in a quick-cooked dish.

Ingredients

  • 16 oz rice noodle or regular pasta, linguine type
  • 3 tablespoons soy sauce
  • 3 tablespoons hoisin sauce
  • 4 tablespoons honey
  • 2 teaspoons Chili garlic sauce
  • 2 -3 cloves garlic minced
  • 1/8 - 1/4 teaspoon red pepper flakes to taste
  • 1/4 cup sesame oil
  • 2 cups carrot approximately 2 large, shredded
  • 1 cup peanuts roasted, salted
  • 1/2 cup cilantro fresh, chopped
  • 2 tablespoons green onion chopped
  • Sriracha sauce to taste

Instructions

  1. Bring a large pot of water to a boil and cook noodles until al dente, approximately 6 minutes. 
  2. Meanwhile, prep your veggies / garnishes.  In a small bowl mix soy sauce, hoisin, honey, chili garlic sauce, and red pepper flakes.  
  3. A couple of minutes before the noodles are done, in a large saute pan, heat sesame oil over medium heat. Add garlic and cook for 30-60 seconds. Be sure it doesn't burn! Add sauce and stir.
  4. When noodles are done, drain and add immediately to pan with sauce and stir until the noodles are well coated. 
  5. Top with carrots, peanuts, cilantro, green onion, and Sriracha. Mix and serve!

Notes

  • Use regular sesame oil for cooking to avoid bitter flavors; reserve toasted sesame oil for finishing touches.
  • Add protein such as shrimp, tofu, or chicken by cooking it first in sesame oil before preparing noodles.
  • Include extra vegetables by cooking them in sesame oil before combining with noodles.
  • If adding protein or vegetables, increase the sauce quantity at least twofold to ensure adequate coating.
