Ingredients
- 5-6 trips Bacon
- 3-4 eggs
- 350 grams cheese tortellini or stuffed tortellini of your choice
- 1 cup peas
Instructions
- Heat your oven to 400F to cook your bacon for 15 minutes (or you can cook it on a skillet if you prefer). Break into 1 inch pieces when done.
- While the oven is heating up, add your eggs to a pot of water and bring it up to a boil to make hard boiled eggs. Dunk them in an ice bath while waiting for the rest of the components to finish cooking.
- At the same time, bring a large pot of salted water to boil before adding in your tortellini. Cook according to the package.
- When the tortellini is done, rinse it under cold water to keep them from sticking.
- To assemble, divide the tortellini, bacon, peas, and cut egg into 4 airtight containers.
- Serve with a dressing of your choice if desired.

Notes
- Note: to thaw the frozen peas, just have them sit in some water
- You can either eat this as is or serve with salad dressing on the side or this lemon basil vinaigrette!
- This meal prep can be served hot or cold.
