Ingredients

  • 1 Cup almond flour If you use almond meal instead, the texture will be less fine and a bit coarser
  • ⅓ Cup icing sugar Please sift or there will be sweet lumps in your dough. Do not replace 1:1 with caster sugar or it'll taste too sweet.
  • 1 egg Make it 2 eggs if you plan to egg wash the cookies.
  • sliced almonds or whole almonds Optional topping that will give the cookies more texture.

  1. Pre-heat the oven to 350F/ 177C/ 157C fan.
  2. Mix the ingredients well till you get a soft moist dough. (It will be stiff and look like there's not enough liquid to bind everything together at first but keep going and you'll get there.)
  3. Scoop the dough into balls and place them about 1 inch apart on a baking sheet. (They don't spread much.)
  4. Optional: top with a sliced/ whole almond then brush with beaten egg.
  5. Bake for about 15 minutes or till nice and golden.

  • Variations

  • Add in some orange zest
  • Add chopped almonds into the dough
  • Add dark chocolate chips for almond chocolate chip cookies: I don't recommend milk chocolate as the cookie is quite sweet already.
  • Roll the baked cookies in Dark Chocolate syrup then cover with chopped nuts.
  • Sprinkle cocoa nibs in the dough: the faint bitterness is a nice contrast to the sweetness of the almond.
  • Add vanilla extract.
  • Almond flour peanut butter cookies: substitute the egg for peanut butter and the icing sugar for maple syrup.
