Ingredients

  • 1 avocado ripe
  • 1 egg large
  • 1 cup cheese Mexican blend, mozzarella, cheddar, shredded
  • 1 tbsp everything but the bagel seasoning (optional)

  1. In a medium bowl, mash the avocado, egg, and cheese with a fork until well combined.
  2. To cook in the oven: Preheat oven to 400°F. Line a sheet pan with parchment paper. Divide the mixture into 3 balls and place them on the pan. Flatten them into patties. Bake for 25-30 minutes or until golden brown.
  3. To cook in the air fryer: Preheat air fryer to 375°F. Line basket with parchment paper. Divide mixture into 3 balls and place them in the basket. Flatten them into patties. Air fry for 18-22 minutes or until golden brown.
  4. Let cook slightly and then serve. Enjoy the avocado bread alone or top it with your favorite breakfast or sandwich toppings.

Notes

  • Serve this bread alone or as a low-carb base for your favorite toppings. 
  • If your avocado is too firm, try microwaving it for 10-15 seconds to soften it.
  • Try adding in fresh herbs like basil or cilantro, dried spices like garlic powder or onion powder, or lemon zest.
  • Store your avocado bread in an airtight container in the fridge up to 3 days. For longer storage, wrap it in aluminum foil and freeze it.
  • For breakfast, top the avocado bread with a fried or poached egg, crispy bacon, smoked salmon, or a smear of cream cheese.
  • For lunch, use it as a sandwich bread for a fresh twist on classics like turkey or a BLT.
