Ingredients

  • 10 ounces Uncooked Macaroni Noodles
  • 4 cups chicken broth
  • 2 cans chili (use your favorite)
  • 1 red bell pepper diced
  • 1 teaspoon garlic powder
  • 2 teaspoons chili powder or Chipotle Chili Pepper
  • salt and pepper to taste
  • 1 cup shredded Mexican blend cheese
  • optional: chopped cilantro or parsley

Instructions

  1. Add noodles and broth to a large stock pot. Bring to a boil and cook until noodles are tender - about 9-13 minutes. Reduce to medium-low heat.
  2. Stir in chili, bell peppers, garlic powder, chili powder, and salt and pepper. Allow to cook for 10 minutes.
  3. Sprinkle cheese over the top of the chili-noodle mixture. Cover the pot for 2-3 minutes until cheese is melted. Serve immediately and garnish with parsley or cilantro as desired. Enjoy!

Notes

  • For a vegetarian meal, use vegetable broth and meatless chili.
