Ingredients

  • 2 pounds boneless skinless chicken breasts
  • 1 teaspoon salt or to taste
  • 1/4 teaspoon black pepper or to taste
  • 2 tablespoons olive oil divided
  • 1 white onion diced
  • 1/2 cup carrots sliced
  • 1/2 cup celery sliced
  • 5 teaspoons minced garlic  about 5 cloves
  • 4 cups chicken broth
  • 1 teaspoon dried thyme
  • ½ teaspoon dried oregano
  • 1 pound gnocchi
  • 1 cup heavy cream
  • 1 1/2 cups baby spinach roughly chopped

Instructions

  1. Season 2 pounds boneless skinless chicken breasts with 1 teaspoon salt and 1/4 teaspoon black pepper.
  2. Heat a large soup pot over medium-high heat. Add 2 tablespoons olive oil tablespoon of olive oil. Sear the chicken for 2 minutes per side until golden brown, but not cooked through. Remove from the pot and set aside on a plate.
  3. Add the remaining 1 tablespoon olive oil to the pot. Add diced 1 white onion, 1/2 cup carrots, and 1/2 cup celery. Cook for 4 to 5 minutes, until vegetables begin to soften. Stir in the minced 5 teaspoons minced garlic and cook for 1 to 2 minutes, until fragrant.
  4. Return the chicken to the pot. Pour in 4 cups chicken broth and season with 1 teaspoon dried thyme and ½ teaspoon dried oregano. Bring to a simmer over medium heat and cook for 15 minutes, or until the chicken is cooked through and the vegetables are tender.
  5. Remove the chicken using tongs and set in a bowl. Shred the chicken using two forks, then return it to the pot.
  6. Add 1 pound gnocchi and simmer for 5 minutes, until tender.
  7. Stir in 1 cup heavy cream and roughly chopped 1 1/2 cups baby spinach. Cook for 1 to 2 minutes, until the spinach wilts.
  8. Taste and adjust seasoning with additional salt and pepper, if needed.
  9. Serve hot.
