30-Minute Sheet Pan Chicken Fajitas (With Taco Seasoning)

These juicy and tender Sheet Pan Chicken Fajitas are the perfect busy weeknight dinner! They're ready in just 30 minute and are seasoned to perfection using my favorite taco seasoning mix. Perfect for serving in tortillas, over a bed of greens or in a bowl with your favorite toppings!

Ingredients

  • 2 lbs. boneless chicken breasts
  • 3 medium bell peppers (450g) I used a red, yellow and green
  • 1 large red onion (300g)
  • 1 Tbsp olive oil (15g)
  • 1 lime juiced
  • 2 (1-oz.) packs taco seasoning
  • 1/4 cup Freshly chopped cilantro
  • Fajita size tortillas for serving
  • Optional for serving: avocado, lime wedges, sour cream, salsa, etc.

Instructions

  1. Preheat the oven to 400 degrees F.
  2. Dry the chicken, peppers and onions well with a paper towel then cut them all into thin slices. Add them all to a rimmed baking sheet.
  3. Drizzle the olive oil and lime juice over top then toss to combine. Then sprinkle the taco seasoning over top and toss again. Spread the chicken and vegetables out over the baking sheet evenly.
  4. Bake for 18-20 minutes, or until chicken is cooked through. Then broil on high for 3-4 minutes to get everything a little charred.
  5. Sprinkle with the fresh cilantro then serve with warm tortillas and whatever else sounds good and enjoy!

Notes

  • More Ways To Enjoy Chicken Fajitas!
  • With sides. Like cilantro lime rice, black beans (high in fiber!) or cauliflower rice for lower carb option
  • Crunchwrap. Stuffed into a low carb crunchwrap with some cheese
  • Salad. On top of a bed of greens like in my Healthy Taco Salad
  • Fajita bowl. Add fajitas to a bowl with your favorite toppings, like avocado, cheese and sour cream
  • Snack style! With a side of Healthy 7 Layer Refried Bean Dip and tortilla chips
