Ingredients

  • 1 teaspoon vegetable oil
  • 1 pound lean ground beef
  • 2 shallots diced
  • 1 red pepper diced
  • 4 cloves garlic chopped
  • 2 habanero chiles thinly sliced
  • 2 tablespoons fish sauce
  • 1 tablespoon brown sugar
  • 1 lime juiced and zested
  • 1 cup basil preferably Thai basil
  • 2 green onions thinly sliced

Instructions

  1. Add the oil to your skillet.
  2. Add ground beef and shallots to the skillet, and cook for about 10 minutes on medium to high heat until the meat is completely cooked.
  3. Add the red pepper, garlic, and chilies to the meat mixture. Continue to cook for about 2-3 minutes until fragrant, stirring.
  4. Slowly add the fish sauce, sugar, lime and basil. Cook for about a minute.
  5. Taste to make sure you like the flavor or add to correct it. Garnish with green onions and serve over jasmine rice.

Notes

  • For best flavor, use fresh garlic, shallots, and basil.
  • Habanero chiles pack quite a punch! If you're not a fan of super spicy food, start with one chile and taste as you go. Switch them out for jalapenos or skip them entirely if you aren't a fan of heat.
  • The key to this dish is balancing the salty fish sauce, sweet brown sugar, and tangy lime juice. Taste it before serving and adjust it to your liking.
