Ingredients

  • 20 white button mushrooms cleaned
  • 8 oz crab meat
  • 1 yellow onion diced
  • 4 cloves garlic minced
  • 1 tbsp olive oil
  • 1 tsp Old Bay seasoning
  • 1/2 tsp paprika
  • 1/2 tsp salt
  • 1/2 cup Monterey cheese shredded
  • 1/4 cup cheddar cheese shredded
  • 4 tbsp Panko bread crumbs
  • 1/4 cup green onions sliced
  • 1/4 cup parsley chopped

Instructions

  1. Heat the oven to 375F and coat a cast iron skillet using olive oil. Set aside. 
  2. Remove the stems of the mushrooms and place them in a cast iron skillet. 
  3. Pour 1 tablespoon olive oil in another pan and heat it over medium heat. Sauté onion and garlic in the pan until golden brown. Add in the crab meat and cook for a few minutes. 
  4. Add in bay seasoning, paprika and salt to the crab and stir. Add in the cheeses and half of the bread crumb. Mix well until all incorporated. 
  5. Turn the heat off and stuff the mushroom caps with the filling. Top with some more bread crumbs. 
  6. Bake in the oven for 25 minutes until the mushrooms are cooked. 
  7. Top with green onions and parsley. Serve immediately. 

Notes

  • Store the leftovers in an airtight container and refrigerate for up to 3 days. 
  • Adjust the old bay seasoning to your liking if you'd like the filling less or more spicy. 
  • You can use fresh crab or canned crab meat, but imitation crab might not work as well. 
  • Add a squeeze of lemon juice right before serving for more flavor. 
  • You can make large appetizer by using Portobello mushrooms. The cooking time would be about the same.
