Ingredients
- 1/8 cup + 1 Tbsp. honey
- 1/4 cup coconut oil
- 2 cups quick cooking oats
- 3 Tbsp. brown sugar
- 1/2 cup honey roasted almonds
Instructions
- Add honey and coconut oil to a medium saute pan. Turn the heat on medium-low and whisk until honey is melted.
- Add oats, brown sugar and nuts. Increase the heat to medium and use a wooden spoon to stir and evenly coat the oats and brown sugar. Continue to cook until granola starts to brown, and then stir again. Continue to do the same thing until all of the oats and nuts are toasted and slightly golden brown.
- Turn the heat off and season with a pinch of salt. Spread on to a large rimmed baking sheet. Cool for 1-2 minutes, stirring every 30 seconds or so to make sure the granola doesn't stick together. Once completely cool, store or serve with yogurt!
Cup of Yum
Notes
- Optional ingredients that would work great: Coconut, dried cherries, pecans, flax seed or chia seeds
