5 Minute Carrot Cake in a Mug
5 Minute Carrot Cake in a Mug is just that - from scratch Carrot Cake, made and cooked in a Mug, that only takes 5 minutes (probably less) from start to finish! There's not a box mix in sight!
Ingredients
- 4 tbsp carrot
- 4 tbsp flour
- 2 tbsp butter
- 3 tbsp milk
- 2 tbsp brown sugar
- ½ tsp cinnamon
- ¼ tsp baking powder
Instructions
How to Make Carrot Mug Cake
- Peel and grate the carrots.
- Melt the butter in a mug in the microwave.
- Pour in the sugar, milk and then the flour into the mug.
- Add the cinnamon and baking powder and stir.
- Finally add in the grated carrots and mix well. Microwave for about 1 minute (the exact time will depend on your microwave wattage.)
- Insert a thin metal or wooden skewer into the center of the cake. If the skewer has batter on it, then continue to microwave the cake for 10 seconds at a time until the skewer comes out dry (no batter but a little greasy.)
Spiced Cream Cheese Frosting for the Carrot Cake Mug Cake
- Combine powder sugar, cream, whipped cream cheese and cinnamon in a bowl and blend well.
- Remove the carrot cake from the microwave once it has finished baking and add the frosting to the top.
Notes
- The exact cook time in the microwave will depend on the wattage. For reference, it took 1minute for this Carrot Cake Mug Cake to cook in a 1250 watt microwave.
- I used a 8oz / 250ml size of mug for this recipe.
