5-Minute Honey Lime Dressing

You only need 5 minutes and a few simple ingredients to make this very easy honey lime dressing. Try it on salads, meat, veggies, or as a marinade!

Ingredients

  • ½ cup olive oil
  • 1 tablespoon vinegar white or red wine vinegar, apple cider vinegar
  • 2 tablespoons honey
  • 2 lime 1 to 2 limes to taste, both juice and zest) For a vinaigrette, 1 is about right, for a drizzle or marinade, go with 2
Optional (but recommended!)
  • 1 teaspoon mustard (Dijon is nice)
  • 1 tablespoon onion finely chopped
  • salt to taste (a pinch of each, or a few grinds
  • black pepper to taste (a pinch of each, or a few grinds

Instructions

  1. Whisk all the ingredients together in a small food processor, or use a clean jar and lid and shake it (you can also just whisk together in a bowl or jug with a small whisk or fork).
  2. Toss through a salad, drizzle over vegetables, or use as a marinade. Store any leftovers in the fridge in a sealed jar or container for up to about a week.

Notes

  • Limes: Add juice/zest of 1 lime to start with, then taste and add more if you like. I find 1 lime is about right for a dressing/vinaigrette for a salad, but I prefer more lime for a drizzle e.g. for halloumi kebabs or a lunch bowl, or a marinade.
  • Storage: Use a clean jar with a lid to shake up all the ingredients together. You can store any leftover dressing like this in the fridge for up to a week.
  • If the olive oil solidifies in the fridge, simply take it out of the fridge for a while before using.
  • Variations: Add a spoonful or two of Greek yogurt for a creamier dressing, or a version that works particularly well as a marinade. Feel free to skip the mustard and/or the onions if you'd like to make an even simpler version.
  • Making a marinade: To use this lime honey dressing recipe as a marinade, I'd suggest doubling all the ingredients (you can still stick with just 2 limes). Use to marinate your meat in the fridge for at least an hour, and up to overnight.
