Ingredients
- ½ cup chickpeas canned or cooked
- 5 oz (112 g) canned tuna (in water)
- 1 tbsp kalamata olives chopped
- 1 tbsp capers
- 1 small cucumber chopped
- 1 celery stalk sliced
- 1 tbsp extra virgin olive oil
- 1 tsp balsamic vinegar
- 1 tsp dried oregano
- Juice of ½ lemon
Instructions
- Take a large bowl and add the chickpeas, Kalamata olives (sliced or chopped), capers, chopped cucumber, sliced celery stalk and tuna.
- In a small bowl, mix: 1 teaspoon of balsamic vinegar and 1 tablespoon. of extra virgin olive oil
- Pour the dressing over the salad and toss well.
- Add a squeeze of lemon juice before serving and sprinkle with dried oregano.
