5-Minute Mediterranean Salad Dressing with Fresh Lemon
Add brightness to your next salad with this homemade Greek-inspired Mediterranean Salad Dressing! Easy to make in less than 5 minutes with simple pantry ingredients and just a shake of a jar.
Ingredients
- 2 teaspoon oregano dried
- ½ teaspoon thyme dried
- 1-2 cloves garlic minced, or ½ teaspoon garlic powder
- ¼ cup red wine vinegar
- 1 tablespoon lemon juice fresh
- ½ cup extra virgin olive oil
- ½ teaspoon Dijon mustard optional
- ½ teaspoon salt or to taste - pasta salad add extra ¼ teaspoon
- ⅛ - ¼ teaspoon black pepper or to taste, freshly ground
- 1-2 teaspoons honey or maple syrup, if needed
Instructions
- Add the ingredients to a jar. Cover tightly with the lid and shake until combined. Taste test and adjust the salt or acid levels, if needed. If it's too acidic, add a little honey or maple syrup.
- Alternatively, combine all ingredients except the oil, then, whisk while slowly drizzling in the olive oil until the dressing is combined.
Notes
- Fresh Herbs: if using fresh, double the amount!
- Dijon Mustard: helps to emulsify the dressing; if you omit do note that separation will occur more quickly.
