5 Minute Microwave Keto Lemon Curd

Silky smooth, super lemony and incredibly easy to make, this Keto Lemon Curd comes together in only 5 minutes!

Ingredients

  • ½ cup fresh lemon juice
  • ½ cup grass-fed unsalted butter melted
  • ¾ cup monk fruit/allulose
  • 3 egg yolks
  • 2 whole eggs
  • 2 tablespoons lemon zest
  • ¼ teaspoon salt

Instructions

  1. Add the eggs into a large mixing bowl and whisk.  Add in the sweetener and mix for 2 minutes or until well combined.  Add the remaining ingredients and mix well. Cook in the microwave for 1 minutes, remove and whisk.  
  2. Place back in the microwave to cook for another minute, remove and whisk. Repeat the process 3 more times, for a total of 5 minutes.
  3. Allow to cool at room temperature for 10-15 minutes, then store leftovers in an airtight jar the fridge for up to a week, or in the freezer.

Notes

  • *Makes about 1 ½ cups.
  • If you don't have a microwave, you can always make my Keto Lemon Curd using the traditional stovetop method.
