5-Minute Nacho Cheese Dip (so easy!)
Whisk together an irresistible nacho cheese dip in just 5 minutes with simple ingredients. It's smooth and thick enough to stick on a chip, with just the right balance of tang and spice that you love in a classic nacho cheese sauce. The perfect party appetizer!
Ingredients
- 12 ounces evaporated milk
- 1 Tablespoon cornstarch reduce to 3/4 TBSP for a thinner sauce
- ½ teaspoon onion powder
- ¼ teaspoon garlic powder see note
- ½ teaspoon smoked paprika
- ½ teaspoon chili powder
- ¼ teapsoon cayenne pepper
- 3 Tablespoons jalapeno brine hot pickled
- 1 teaspoon hot sauce more to taste
- ½-¾ teaspoon kosher salt more or less to taste
- 8 ounces cheddar cheese freshly shredded, medium
Instructions
- In a medium saucepan over medium-low heat, whisk together everything except the cheese. Start with ½ teaspoon of salt if you'd like, adding more at the end if you'd like (I do).
- Bring just to a simmer (don’t boil!) for 2-3 minutes while frequently stirring.
- Reduce heat to low and stir in the shredded cheese in batches, allowing each addition to melt completely. Keep stirring to ensure the cheese melts smoothly and the dip remains a consistent temperature. Taste test, adding additional salt as needed.
- Transfer the dip to a serving dish and garnish as desired. Enjoy with tortilla chips.
Notes
- Storage: place leftovers in an airtight container in the refrigerator for 3-4 days. Reheat in the microwave or stovetop until warmed through, stirring as needed.
- Yield: approximately 2 cups of dip/sauce.
