Ingredients

  • 1 cup cherry tomato coarsely chopped, ripe
  • 2 Tablespoons onion coarsely chopped, white or red, or shallot
  • 1 medium garlic peeled and coarsely chopped, clove
  • 1 small jalapeño coarsely chopped, seeds removed if you prefer mild salsa
  • 1 Tablespoon olive oil optional
  • ¼ cup cilantro coarsely chopped, fresh
  • lime or to taste, juice from half lime
  • salt to taste, pinch
  • poblano optional additions
  • chipotle pepper
  • red bell pepper
  • pineapple
  • Mango

Instructions

  1. Place tomatoes, onion, garlic, jalapeno, and olive oil (if using) into a blender or food processor and blend until creamy, or leave more coarsely chopped if you prefer.
  2. Add cilantro and process once more for a second or two to distribute evenly. Season with lime juice and salt to taste and chill or serve immediately.
