5-Minute Tomato Appetizer with Feta
This quick tomato appetizer features halved Campari or Roma tomatoes topped with crumbled feta cheese, drizzled with extra virgin olive oil, and sprinkled lightly with Aleppo or red pepper flakes for a touch of heat. The freshness of the tomatoes pairs with creamy, tangy feta and bright olive oil, creating a simple yet flavorful bite that comes together in minutes.
Ingredients
- 6 campari tomatoes or you can use Roma tomatoes
- 3 to 4 tablespoons feta cheese crumbled
- extra virgin olive oil
- Aleppo pepper optional, or red pepper flakes
Instructions
- Slice the Campari tomatoes in half horizontally (around the equator). If using Roma tomatoes instead, cut them in half vertically (the long way).
- Assemble the tomato halves on a plate with flesh side facing you. Top each half with some crumbled feta. Drizzle with extra virgin olive oil, and finish with a pinch of Aleppo-style pepper or red pepper flakes, if using. Serve.
Notes
- For best flavor, serve this appetizer fresh, although leftovers can be refrigerated for up to 2 days.
- Choose high-quality extra virgin olive oil to enhance the taste.
- Use Campari or Roma tomatoes depending on availability and preference.
