Ingredients

  • 6 chicken thighs
  • 2 onion peeled and roughly chopped
  • 4 spring onions scallions, roughly chopped
  • 3 tbsp jerk seasoning paste mild
  • 80 ml orange juice 0.33 cup
  • 2.5 tbsp soy sauce
  • 4 thyme sprigs

  1. *Preheat 1 tbsp oil in a frying pan over medium heat and brown the chicken on both sides for about 2 to 4 mins. Transfer the chicken into your slow cooker.
  2. Add the onion, spring onion, jerk seasoning paste, orange juice and soy sauce into a high-powered blender and blend into a smooth paste, before pouring the paste over your chicken and add in the thyme.
  3. Cover the slow cooker and cook on high for 3.5-4 hours until the chicken is cooked through, adjust seasoning before switching off the heat.
  4. Serve the jerk chicken stew with some rice and peas or some warm roti and enjoy.

Notes

  • You can skip browning the chicken and place it directly in the slow cooker; just increase cooking time to 7-8 hours on low heat.
  • Skinless chicken thighs lower the freestyle points if tracking this nutritionally.
  • Suggestions for serving include pairing with Instant Pot brown rice, sweet potatoes, or serving sliced over greens for a salad.
