Ingredients
- 10 small firm cucumbers
- 5 thin carrots
- 6 shallots
- 3 small green peppers
- 3 small red peppers
- 4 tablespoons salt
- ½ cup water
- ½ cup caster sugar
- ¾ cup white vinegar

- Glass jar with hermetic seal
Instructions
- Peel the cucumbers in stripes, remove the seeds and cut them into slices or sticks.
- Peel and cut the carrots into slices or sticks.
- Peel and cut the shallots into 4 wedges, without separating the layers.
- De-seed the peppers and cut them into thin slices.
- Prepare the marinade syrup by combining the salt, water, sugar, and white vinegar in a saucepan. Bring the mixture to a boil, stirring with a whisk, until ingredients are dissolved.
- Reduce heat to low and add the cucumbers, carrots, shallots and peppers. Immediately mix the vegetables in the hot syrup. After mixing well, turn off the heat and remove the pan from the heat.
- Transfer the mixture to a glass jar with a tightly-fitting lid and let cool in the refrigerator for at least 8 to 12 hours.
- Store in the refrigerator for 1 week to 10 days.
