Addictively Spicy MaPo Tofu

Ingredients

  • 2 blocks tofu about 12 ounces per block, firm
  • 2 onion diced
  • 1 cup mushrooms sliced
  • 3 talks green onions chopped
  • 4 cloves garlic minced
  • 2 Tablespoons mirin sweet white cooking wine
  • 2 teaspoons soy sauce
  • 1/2 teaspoon ginger powdered
  • 2 teaspoons Chili oil
  • 1/4 teaspoons Chinese five-spice
  • 3 teaspoons sugar
  • 3 Tablespoons doubanjiang spicy fermented bean paste

Instructions

  1. Add diced onions to a large sauté pan with 2 TB oil and saute on medium heat until onions start to brown.
  2. Add mushrooms, Doubanjiang (spicy fermented bean paste) and stir until well combined.
  3. Add chili oil, ginger, soy sauce, garlic, 5-spice, sugar, and mirin. Stir.
  4. Cut tofu into bite-sized cubes and lay on top of the ingredients in saute pan. Add 1 1/2 cup hot water and gently stir.
  5. Cover and simmer over medium-low heat for about 20 minutes or until tofu is tender.
  6. Garnish with green onions and serve over jasmine rice.
