After Eight Fudge

Easy mint chocolate fudge packed full of classic After Eight mint thins. This makes for a great gift or party treat.

Ingredients

  • 450 g dark chocolate (16oz) 40-50% cocoa works best
  • 1 Tin condensed milk (397g/14oz)
  • 1 Teaspoon peppermint extract
  • 300 g After Eights (10.5 oz)

Instructions

  1. Line an 8x8 tin with baking paper and roughly chop half of the After Eights. Leave 16 mints whole for the topping.
  2. Break the chocolate into pieces and place it into a saucepan with the condensed milk and peppermint extract.
  3. Place the saucepan over low heat and stir gently until the chocolate has melted. The mixture should look thick and glossy.
  4. Remove the pan from the heat and stir in the chopped After Eights.
  5. Transfer the mixture to your lined tin and press it down into place. Top with the remaining After Eights.
  6. Refrigerate for 3 hours until firm then cut into squares.

Notes

  • Store in an airtight container in the refrigerator for up to 2 weeks.
