Aioli

Aioli is a sauce made from garlic and olive oil, popular on the northern shores of the Mediterranean.

Ingredients

  • 5 cloves garlic , peeled and degermed
  • 1 egg yolk
  • 1 cup extra-virgin olive oil , more or less
  • A few drops of freshly squeezed lemon juice
  • salt

Instructions

  1. In a mortar, pound the garlic cloves using a pestle until you obtain a fine mixture. Season with salt.
  2. Add the egg yolk.
  3. Whip the aioli by adding the olive oil very slowly, drop by drop in a very fine stream while swirling constantly with the pestle.
  4. The sauce then emulsifies little by little, like mayonnaise.
  5. Add a little dash of lemon juice.
  6. Once the right consistency is achieved, transfer to a serving bowl.
  7. Serve or refrigerate, but not for too long. It is best to prepare the aioli just before the meal and not store it for too long.
