Ingredients
- 5 cloves garlic , peeled and degermed
- 1 egg yolk
- 1 cup extra-virgin olive oil , more or less
- A few drops of freshly squeezed lemon juice
- salt
Instructions
- In a mortar, pound the garlic cloves using a pestle until you obtain a fine mixture. Season with salt.
- Add the egg yolk.
- Whip the aioli by adding the olive oil very slowly, drop by drop in a very fine stream while swirling constantly with the pestle.
- The sauce then emulsifies little by little, like mayonnaise.
- Add a little dash of lemon juice.
- Once the right consistency is achieved, transfer to a serving bowl.
- Serve or refrigerate, but not for too long. It is best to prepare the aioli just before the meal and not store it for too long.
