Ingredients
- 3 tablespoons fresh ginger chopped
- 2 garlic cloves
- 1 onion roughly chopped
- 1/2 cup chicken broth Homemade is best
- 1 tablespoon extra virgin olive oil
- 1 pound chicken thighs cut into slices about 1/2 inch thick
- 1/2 teaspoon salt
- 1 bunch asparagus cut into 3 or 4 pieces
Instructions
- Combine the ginger, garlic, onion, chicken broth and oil ina container appropriate for an immersion blender. Blend until smooth.
- Sprinkle the salt over the chicken and set aside.
- Add the ginger mixture to large frying pan over high heat and let cook for about 2-3 minutes.
- Next add in the chicken and cook for another 3-4 minutes or until cooked through.
- Finally add the asparagus and cook for another 2-3 minutes or until the asparagus are cooked through but still crisp.

- The ginger in this dish is intense, almost spicy.
- This dish goes well with AIP Cauliflower Rice.
