Air Fryer Baked Potato [No Oil]

A quick and easy vegan baked potato recipe that's perfect every time! Fluffy in the middle with an incredible crispy skin. Top it with all your favourites.

Ingredients

  • 2 medium Russet potatoes scrubbed clean
  • ¼ teaspoon sea salt
  • ½ teaspoon garlic powder optional, but recommended
  • ¼ teaspoon black pepper optional, but recommended
Optional Toppings
  • vegan butter or olive oil
  • vegan bacon bits
  • Cashew cream
  • guacamole

Instructions

  1. Rinse and scrub your potatoes clean, poke a few holes with a fork or knife all around and then sprinkle them evenly with the seasoning on all sides. Place inside your fryer basket.
  2. Air fry at 400 degrees F for 35-45 minutes, flipping them over around the 20 minute mark. (Use tongs to flip them.)
  3. Serve warm with any of your favourite toppings.

Notes

  • Poke a few holes in your potatoes using a fork or knife all around before popping them into your fryer basket. Although it doesn't happen every time, the potatoes CAN explode from the steam build up.
  • Season as desired. We like salt, pepper and garlic powder, but feel free to sub or omit any seasonings to your taste.
  • Cook time will vary according to the size of your russet potatoes, and the model of air fryer you're using. When a fork pierces easily through your potato, it's ready.
