- 90 g unsalted butter
- 112 g brown sugar
- 80 g Greek yoghurt
- 4 large bananas
- 1 large egg
- 80 g Cadbury’s Mini Eggs
- 1 Tsp vanilla essence
- 1 Tsp ground ginger
- 1 Tsp mixed spice
Kitchen Gadgets
- Philips Air Fryer
- Air Fryer Baking Pan
Instructions
- Load the mini eggs into your Thermomix or other blender and mix until like chocolate crumbs. We did speed 6 for 30 seconds. Then put them to one side.
- Add the butter, brown sugar, mixed spice, ginger and mix in the blender for 3 minutes at speed 3.5.
- Then add in Greek yoghurt, egg and vanilla. Blend on speed 3.5 for a further 2 minutes.
- Peel bananas and load them in and then do an extra minute on speed 6.
- Add the self raising flour and mix for another minute at speed 2. Then scrape down the edges if needed to get the last bits of the ingredients.
- Load into a silicone baking pan, stir in the chocolate bits and then place into the air fryer basket.
- Air fry your banana bread for 20 minutes at 160c/320f followed by a further 5 minutes at 150c/300f.
- Allow your banana cake to cool and then slice into medium bread slices and serve warm with some butter.
Cup of Yum
Notes
- Size. I recommend that you don’t overfill your cake pan. If you have a lot instead, do it over two cake pans.
