Ingredients

  • 3 banana mashed using the back of a fork, over-ripe
  • 1 egg medium-sized
  • ½ cup sugar
  • ½ cup olive oil
  • ½ teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • 1⅓ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • salt pinch
  • ½ walnuts or your preferred nuts, chopped
  • ½ chocolate chips

  1. Preheat your air fryer at a temperature of 320°F (160°C) for 5 minutes.
  2. Combine the mashed bananas, egg, sugar, olive oil, cinnamon and vanilla extract in a bowl.
  3. Sprinkle the all-purpose flour, baking powder, pinch of salt, and baking soda on top, then fold to mix. Add the chopped walnuts and chocolate chips then combine.
  4. Divide the batter equally into muffin forms and carefully place these inside your air fryer basket. Air fry at 320°F (160°C) for 17 minutes or until a toothpick inserted in the middle comes out clean.

Notes

  • If muffins brown too quickly, lower the air fryer temperature and cover with foil to prevent over-browning.
  • Use paper or silicone liners that withstand at least 400°F for easy cleanup and to maintain muffin shape.
  • Substitute or add nuts and dried fruits like pecans, cranberries, or raisins for flavor variations.
  • Adjust spices such as cinnamon to pumpkin spice or nutmeg according to taste preferences.
  • For a paleo-friendly version, use cassava flour, coconut sugar, and coconut oil in place of all-purpose flour, sugar, and butter.
  • Note that subsequent batches may cook faster as the air fryer remains hot.
  • Store muffins properly to prevent molding or drying out because they contain fruit.
