Air Fryer Blueberry Muffins
Make perfect Air Fryer Blueberry Muffins following my easy recipe! These delicious from scratch muffins are perfect for breakfast or as a treat with your cup of coffee.
Ingredients
- 1 cup flour all-purpose/ plain, 4 tbsp, 150g
- 1 ½ cups sugar or Sukrin Gold sweetener, 150g
- 1 tbsp baking powder
- ½ tsp cinnamon
- ¼ cup butter melted, 60ml
- ½ cup vanilla yogurt 1 small pot Activia, 115g
- 1 egg large
- 1 cup blueberries 190g, fresh
- 2 tbsp demerara sugar to top the muffins, or Turbinado sugar
Instructions
- Stir together the melted butter, yogurt, egg and vanilla extract in a large mixing bowl.
- Mix in the sugar then sift in the flour and baking powder. Stir until you have a smooth batter but do not over-mix.
- Fold in the blueberries, setting a few aside to pop them on top of the muffins.
- Divide the batter between six large muffin cases or up to eight smaller ones. You can use tulip shaped paper cases, doubled to make them sturdier, directly in the air fryer basket. I trimmed mine slightly as I didn’t want them to be too close to the heat.
- Add a couple of blueberries on top of the batter and sprinkle with the sugar.
- Bake the muffins for 18-20 minutes in the air fryer at 320°F (160°C). They are ready when a toothpick inserted in the middle comes out clean.
- Cool the muffins before serving.
