These Air Fryer Breakfast Potatoes are a quick, easy, and absolutely delicious breakfast side dish. Crispy on the outside, tender on the inside, and ready in minutes, they pair perfectly with eggs, pancakes, or any of your favorite morning staples.

Ingredients

  • 4 medium Russet potatoes
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon onion powder

Instructions

  1. Spray the basket of an air fryer with non-stick cooking spray; set aside.
  2. Peel and chop the potatoes into ¾-inch pieces.
  3. In a large mixing bowl, toss the chopped potatoes in the olive oil.
  4. Add the garlic powder, paprika, salt, and onion powder to the potatoes and stir until the potatoes are coated in the seasoning.
  5. Pour the seasoned potatoes into the greased air fryer basket.
  6. Cook the potatoes at 400F for 20 minutes, stirring halfway through the cooking time.
  7. Test the potatoes with a fork to be sure they’re cooked through.
  8. Serve hot.

Notes

  • You can also add black pepper.
  • I check the potatoes a few times during the last 5 minutes of air frying just to be sure they don’t burn.
  • The potatoes can be stored in the refrigerator for up to three days or frozen for up to three months.
