Air Fryer Breakfast Potatoes

These air fryer breakfast potatoes are a delicious diner style breakfast side.

Ingredients

  • 2 large baking potatoes
  • 2 small bell peppers
  • 1 1/2 Tablespoons olive oil
  • 1 teaspoon salt
  • 1 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon pepper
  • 4 slices bacon for garnish

Instructions

  1. Clean and dice the potatoes and peppers. Cut into 1 inch cubes. You can peel the potatoes or leave the skin on, whichever you prefer.
  2. Put the potatoes and peppers into a bowl. Drizzle with the olive oil and spices and toss so that the potatoes are coated with oil and spices.
  3. Put the mixture into the air fryer basket. Make sure some holes are open so that there is room for the air to circulate.
  4. Cook at 400 degrees F for 15-20 minutes. Open the air fryer once during cooking and toss the potatoes to mix them around. Cook until the potatoes are browned and crispy outside.
  5. Serve immediately sprinkled with bacon and parsley.

Notes

  • Making the potatoes all the same size will make them cook and brown more evenly.
  • The final cooking time will depend on the size of the potatoes, how full the basket is and how powerful your air fryer is.
