Ingredients

  • 1 butternut squash just under 3 pounds, medium
  • 2 teaspoons olive oil
  • 3 teaspoons coconut sugar
  • 1 teaspoon cinnamon
  • 1/4 to 1/2 teaspoon salt to taste, sea salt

Instructions

  1. Peel the squash, slice it in half, and scoop out the seeds.
  2. Cut the squash into 1/2-inch cubes and toss with the oil.
  3. Add the rest of the ingredients into the bowl and toss to coat well.
  4. Place the squash in the air fryer in a single layer (you may need to do it in two batches) and cook at 400°F for 15-20 minutes, until fork-tender.
