Ingredients
- 450 g (1 pound) chicken breasts, or chicken thighs
- 1 white onion , finely sliced
- 1 red bell pepper , sliced
- 1 yellow bell pepper , sliced
- 1 green bell pepper , sliced
- 1 corn cob , fresh
- 1 tbsp avocado oil , or as needed
- 1 ½ tsp salt
- 1 tsp sweet paprika
- 1 tsp mild chili powder
- 1 tsp garlic powder
- 1 tsp brown sugar
- ½ tsp freshly ground black pepper
To serve
- tortillas
- Sliced avocado or guacamole
- lettuce
- cheddar cheese
- salsa
- sour cream
Instructions
- Slice the onion and peppers and cut the chicken intro strips. Use a sharp knife to cut the corn kernels off the cob. If you are using canned corn, drain well first.
- Add all the ingredients to the basket of your air fryer (remove the rack if is detachable). Drizzle with the oil and add all the spices and seasoning. Mix well to coat the ingredients in the spices.
- Air fry for 15 minutes at 190°C (375°F), shaking the basket halfway through so everything cooks evenly. You may need to cook for a little longer depending on your air fryer model – just make sure the chicken is cooked all the way through.
- Have a quick taste to check the seasoning. Squeeze half a lime over the chicken fajitas and garnish with chopped coriander (cilantro).
- Serve in tortillas (as a wrap) with salsa, sour cream, cheese, avocado and lettuce or skip the tortillas and serve as a salad or over rice.
