Air Fryer Chicken Fajitas

Ingredients

  • 650 g chicken breast (cut in strips)
  • 1 large red capsicum pepper (deseeded and roughly sliced)
  • 1 large yellow capsicum pepper (deseeded and roughly sliced)
  • 1 medium red onion (roughly sliced)
  • 5 teaspoon fajitas seasoning
  • 1 teaspoon salt
  • 2 tablespoon vegetable oil
  • chopped coriander and lime wedges (to garnish)

  1. Preheat your air fryer to 200 ℃ (390°F).
  2. Peel and roughly slice the onions, and set them aside.
  3. Deseed the peppers and slice them the same size as the onions.
  4. Cut the chicken into strips.
  5. In a large mixing bowl, combine the fajita seasoning mix, salt, and, vegetable oil. 
  6. If you want to make your own fajitas seasoning, simply mix 1 ½ tsp of cumin, 1 ½ tsp of smoked paprika, 1 teaspoon of oregano, ½ teaspoon of garlic powder, and ½ teaspoon of chili together.
  7. Add the chicken strips, along with the sliced peppers and onions.
  8. Toss the mixture to combine and then let it marinate for a couple of hours if you have time. 
  9. Place the chicken and vegetables in the air fryer basket, making sure they are in a single layer.
  10. Cook for 10-12 minutes, tossing occasionally with tongs and checking on it at the 5-minute mark to give it a good shake.
  11. When the fajitas are ready, transfer them to a bowl or serve them in tortilla wraps with some jalapeno peppers, sour cream, salsa, and lime wedges.

Notes

  • Cut the chicken and vegetables the same size to ensure even cooking.
  • To add some extra flavor, you can marinate the chicken and vegetables in the spice mixture for a few hours before cooking.
  • Don't overfill the air fryer basket, as this can lead to uneven cooking. It's better to cook the fajitas in batches if needed.
  • Use a meat thermometer to ensure that the chicken is cooked to an internal temperature of 74° C (165° F).
  • The cooking time for this recipe may vary depending on the size of your chicken, onion, and bell pepper pieces. If you cut them into smaller chunks, you might want to reduce the cooking time by a couple of minutes.
