Air Fryer Chicken Thighs (Skinless & Boneless)

Ingredients

  • 8 chicken thighs skinless and boneless
  • 2 tbsp light soy sauce
  • 2 tbsp honey
  • 2 tbsp Dijon mustard or honey mustard
  • 1 tbsp avocado oil or rapeseed oil
  • 2 tsp garlic powder
  • 1 tsp paprika sweet or smoked
  • 1 tsp Italian Herbs
  • 1 tsp salt
  • ½ tsp cayenne pepper (optional)

  1. Combine all the marinade ingredients in a Pyrex dish, add the chicken thighs and turn them so that they are well coated in the marinade. Leave them for a minimum of 30 minutes to absorb all those flavors (or cover and chill in the refrigerator for up to overnight).
  2. Preheat the air fryer at 190°C (375°F) and mist with a little oil (avocado oil is a good choice). Add the chicken thighs in a single layer and cook for 8 minutes.
  3. Turn the chicken thighs over and baste them with the marinade. Cook for a further 8 -10 minutes or until the chicken registers above 75°C (165°F) on a meat thermometer.
  4. You can literally serve these crispy-juicy chicken thighs with pretty much anything! They are great with a healthy salad, baked potatoes or fries, in a rice bowl or however you like.
