Air Fryer Chimichanga

Ingredients

  • 6 large flour tortillas
  • 6 cups premade picadillo, roasted vegetables, chorizo con papas, this shredded beef, etc.
  • 1 ½ cups refried beans
  • 1 ½ cups shredded cheese
  • 3 Tablespoons avocado oil
Toppings
  • Mexican crema, salsa, guacamole

Instructions

  1. Warm the tortillas in a dry skillet or microwave for about 10-20 seconds to make them pliable.
  2. Place about 2 tablespoons of refried beans and spread in the center of each tortilla. Then add about 1 cup of the filling and sprinkle shredded cheese on top of the filling.
  3. Fold in the sides and roll it up tightly, tucking in the ends to create a burrito shape.
  4. Air Fry: Place the burritos on the air fryer tray and brush them lightly with oil or you can lightly spray them with cooking spray before air frying.
  5. Preheat the Air Fryer: Set your air fryer to 400°F and let it preheat for 3–5 minutes. Air fry for 8–10 minutes. Halfway through, flip the chimichanga to ensure they’re evenly cooked on all sides.
  6. Serve while warm and top with Mexican crema or sour cream, guacamole, or your favorite toppings. Serve with a side of salsa or pico de gallo.
  7. That's it! The key to a good chimichanga is getting the tortilla crispy with a flavorful filling.
