Ingredients

  • 1 tablespoon olive oil
  • 1 pound ground pork (453g)
  • 3 cups Cole Slaw mix (about 200g)
  • 2 green onions chopped
  • 2 garlic cloves minced
  • 1 teaspoon grated ginger
  • 2 tablespoons soy sauce
  • 2 teaspoons toasted sesame oil
  • 12 egg roll wrappers

Instructions

    Cup of Yum
  1. Heat the olive oil in a large nonstick skillet over medium-high heat. Add the pork and cook, stirring often, until only a few pink pieces remain about 4 minutes.
  2. Add the cole slaw mix, green onions, garlic, and ginger. Cook, stirring often, until the cabbage is tender, about 2 minutes. Stir in the soy sauce and sesame oil.
  3. Working one wrapper at a time, position it so it makes a diamond shape on your work surface. Lightly dab the top corner with water.
  4. Spoon 3 to 4 tablespoons of pork mixture in the center of the wrapper. Fold the bottom corner up over the filling. Fold the two side corners towards each other over the filling, then roll up to the top corner and gently press to seal. Place the egg rolls in the air fryer basket, and spray lightly with cooking spray or brush with more olive oil.
  5. Air fry, in batches, at 350°F, flipping after 7 minutes, until golden brown and crispy, about 12 minutes total. Serve hot with your favorite dipping sauce.

Notes

  • Don't Overfill: It can be tempting to stuff your egg rolls with as much filling as possible, but overfilling can lead to tearing and leaking. Stick with no more than a quarter cup of filling per wrapper. I rolled my egg rolls like a burrito: folding one long edge over the filling, then folding the short edges in, and rolling to close.
  • Spray or Brush with Oil: Lightly brushing the egg rolls with oil or spritzing them with cooking spray before air frying will give them a more even golden color and enhance their crispiness.
  • Avoid Overcrowding: Cook the egg rolls in batches to ensure they're not overcrowded in the air fryer. Cooking them in a single layer allows for better air circulation and more even cooking.
  • Shake or Turn Halfway: For even browning and crispiness, shake the air fryer basket or turn the egg rolls halfway through the cooking time.
  • Adjust as Needed: Depending on your air fryer model and the size of your egg rolls, you might need to adjust the cooking time. Keep an eye on them the first time you make the recipe to find the perfect timing.
  • Serve Immediately: Egg rolls are best enjoyed fresh from the air fryer while they're still crispy and warm. Serve them with duck sauce or your favorite dipping sauce for an added flavor boost!
