- 1 medium eggplant
- 1 Tablespoon olive oil
- 1/2 teaspoon salt
- 1/2 teaspoon garlic powder optional
Instructions
- Cut the eggplant into cubes. There is no need to peel it.
- Put the cubes in a bowl and toss with the oil, salt and garlic powder.
- Put the eggplant in a single layer in the air fryer and cook at 400 F for 10 minutes. Shake the basket halfway through.
