Ingredients

  • 1 medium eggplant
  • 1 Tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon garlic powder optional

Instructions

  1. Cut the eggplant into cubes. There is no need to peel it.
  2. Put the cubes in a bowl and toss with the oil, salt and garlic powder.
  3. Put the eggplant in a single layer in the air fryer and cook at 400 F for 10 minutes. Shake the basket halfway through.
