Ingredients

  • 3 bell pepper seeded and cut lengthwise into 1/2-inch slices; I used one each of red, yellow, and green bell peppers
  • 1 red onion peeled and cut lengthwise into 1/2-inch slices
  • 1 1/2 tablespoons extra virgin olive oil
  • 1 teaspoon kosher salt
  • 1/2 teaspoon garlic powder
  • 1 teaspoon cumin powder
  • 1 teaspoon paprika
  • 1/4 teaspoon black pepper freshly crushed
  • 1/2 teaspoon oregano
  • 1/2 lime juiced
  • cilantro for garnish, leaves

Instructions

  1. Preheat the air fryer to 380°F.
  2. Add the pepper and onion slices to a large bowl and add the oil, salt, garlic, cumin, paprika, black pepper and oregano. Toss until well combined.
  3. Place the peppers and onions in the air fryer basket in a single layer as much as possible and air fry at 380°F for 8-10 minutes or until fork tender and beginning to char.
  4. Remove the basket at the mid-way point and shake or stir the peppers and onions to ensure they cook evenly.
  5. Add a sprinkle of lime juice. You can also garnish with some cilantro leaves. Serve immediately.

Notes

  • Add veggies or protein to the fajitas:
  • Frozen Fajita Veggies: If you're using frozen fajita veggies, there's no need to thaw them. Just add a minute or two to the cooking time. Keep in mind that frozen veggies may release more moisture, so they won’t be as crisp as fresh ones.
  • Halloumi: This firm cheese adds a delicious salty bite to the fajitas.
  • Mushrooms: Earthy and meaty, they soak up flavors beautifully.
  • Tofu or Paneer: A great protein option! Use extra firm tofu or paneer cut into strips.
