Ingredients

  • 1½ pound fingerling potatoes cut lengthwise
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon paprika
  • 1 teaspoon salt
  • ¼ teaspoon pepper
  • 2 to 4 sprigs fresh thyme
  • ¼ cup freshly grated parmesan

Instructions

  1. In a bowl, add the fingerling potatoes, garlic powder, onion powder, paprika, salt, pepper, thyme, and parmesan. Toss well to combine.
  2. Place a liner in the air fryer basket and transfer the fingerling potatoes into the air fryer in a single layer. Add any leftover sprigs of thyme on top of the potatoes if desired.
  3. Air fry at 400F for 17 to 23 minutes, or until they’ve reached your desired level of crispiness. Make sure to shake the basket (or flip the potatoes with tongs) at the halfway mark.
  4. Serve immediately with additional parmesan if desired.
