Air Fryer Fried Rice

Ingredients

  • 3 cups rice cooked and chilled
  • 1 1/2 cups frozen mixed vegetables
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 2 tablespoons soy sauce
  • 1 large egg beaten, optional
  • 2 green onions sliced for garnish

Instructions

  1. In a large bowl, mix the cold rice, frozen vegetables, and olive oil until evenly coated.
  2. Season with salt, garlic powder, and black pepper. Stir in soy sauce and mix well.
  3. Transfer the rice mixture to a pan that fits in your air fryer. Air fry at 360°F for 10 minutes.
  4. Stir the rice, pour in the beaten egg if using, and continue to air fry for another 5 minutes.
  5. Serve hot, garnished with sliced green onions.
