Ingredients

  • 400 g self-raising flour
  • 450 g caster sugar aka super fine sugar
  • 50 g Galaxy Hot Chocolate mix
  • 200 g butter unsalted
  • 4 egg large
  • 1 Tbsp vanilla extract or vanilla paste
  • 480 ml milk semi skimmed
  • 1 Tbsp extra virgin olive oil
Galaxy Ganache
  • 300 g Galaxy Easter chocolate
  • 50 g butter
  • 120 ml heavy cream also called double cream
  • Easter chocolates for decorating
Kitchen Gadgets
  • Cosori Air Fryer
  • Philips Air Fryer XL
  • Thermomix
  • 2 Red Round 6 Inch Silicone Pans

Instructions

    Cup of Yum
  1. Add the sugar and the butter to the Thermomix and mix on speed 4 for 3 minutes.
  2. Then add in the olive oil, eggs and vanilla. Mix at the same speed for another 2 minutes.
  3. Next scrape the edges for any excess with a silicone spatula and then add the flour and the chocolate powder. Mix on speed 4 for 2 minutes.
  4. Scrape the edges again and add the milk and do a last mix on the same speed for 2 more minutes. Then pour the mixture into 2 silicone pans. Place the pans into the air fryer and air fry for 15 minutes at 170c/340f followed by 25 minutes at 160c/320f so that the middle will cook. Check with a thermometer that it comes out clean and if it doesn’t add an extra 10 minutes at 150c/300f.
  5. Then leave the silicone cake pans to cool and then remove the silicone.
  6. When the cakes are cool make the ganache. Add all the ganache ingredients into the Thermomix and cook at 75c/165f on speed 2 for 5 minutes or until you have a creamy ganache. If too thick adjust with a little extra double cream. Then fridge for an hour and then stir.
  7. Trim the top off the cakes to make them level. Then add a little ganache to a cake board to help keep the cake in place. Add the bottom cake to a cake board, then add a layer of ganache or swap for some buttercream, then sandwich the other cake on top.
  8. Then pour over the ganache and finish with some easter decorations. Fridge for an hour to fully set before slicing.

Notes

  • Mixture. We used a mixture of different Easter chocolates eggs, but you can do any. Or you can just stick to Galaxy chocolate to keep in with the theme of a galaxy chocolate cake recipe.
