Ingredients
- 1 pound baby potatoes about 1.5 inches long
- Olive oil spray
- 2 teaspoons kosher salt
Instructions
- Slice each potato 10 times, making sure not to cut all the way through the potato. You want to have no larger than ¼ inch slices that go no more than ¾ of the way through the potato.
- Add the potatoes cut side up to the air fryer (make sure not to overcrowd the air fryer basket) and spray them with olive oil spray. Sprinkle each potatoes lightly with kosher salt.
- Cook at 400 degrees F for 10-12 minutes or until the potatoes are crisp and golden brown. Serve warm or store in an airtight container in the fridge for up to two days.

Notes
- I’m using baby golden potatoes but fingerling or baby red potatoes will also work.
- Olive oil spray helps the potatoes crisp in the air fryer.
